The recipe I used is from this link: http://www.tiana-coconut.com/coconut_flour_recipes.htm  One has to scroll down a ways to see it, but it is there, between the recipe for Maple Pecan Cake and Drop Biscuits. The only trouble I had was spreading the crèpe batter in the crèpe pan. It did not go very smoothly. But the taste is not bad!

Rice flour or another gluten-free flour can be used for the small amount of wheat flour that is in those &lt;i&gt;galettes&lt;/i&gt;, which are mostly made of buckwheat flour. I am gluten intolerant, so I tried to make some crèpes out of coconut flour on Tuesday. They looked like crap (heh) but tasted okay, especially drowned in some pure maple syrup.

Thanks for your humor and insight in what it is to live in France.
